I am one of those odd few who sticks to my healthy eating regime no matter what the holiday or celebration. St. Patrick’s Day is one of those days. My eyes indulge in the stunning cupcakes, layer cakes, marshmallows, Guiness Floats, decorated cookies, truffles, candy & everything green!

Folks celebrate this fun lucky holiday with green beer, green bagels and more (yes, my kids eat the green bagels at school.) I go with all natural green from avocados, match tea and veggies.

I recently received the cookbook The Naptime Chef by the awesome food blogger Kelsey Banfield. I have been a fan of Kelsey’s for some time and have been eager to get my hands on her beautiful book. I choose a simple and extremely adaptable recipe for green beans and added a few of my very own spins. I love taking the simple and dressing it up with all kinds of ribbons and bows. In the book Kelsey has a simple, classic side dish recipe: Green Beans with Toasted Almonds, Olive Oil and Sea Salt. Perfect as is.

I took this great concept and made it into a full vegetarian/meatless meal. Now you have a few ways to get more veggies into your day!

Can I tell you a little secret? It was virtually dark outside when I took these photos. I was determined to satisfy a BIG chocolate craving and shoot some quick photos for this post. Both needs were met. Thankfully the pictures look sunny, bright and happy with the last glimmer of natural light. No artificial help at all.

We love our chocolate. Whether it is in cookies, cakes, parfaits, crepes, smoothies or shakes. We love it in bar form too. Hot cocoa is grand. Any which way, we fit it into our day. This shake will razzle dazzle you with a creamy blend of coconut milk, almond milk, Medjool dates and of course lots and lots of chocolate.

Earlier this week we talked about how roasted strawberries are the best thing ever. A lot of you guys dashed into the kitchen to make them as soon as you read my recipe for Citrus Roasted Strawberry Parfaits. You learned that by roasting strawberries they become even sweeter and the depth of flavor is amazing.

Now that we know how good this is, let’s make cookies! As always I’ll urge you to try these for breakfast. They are all natural, great for you ~ sugar free, grain free, gluten free. Best kinda breakfast, snack or dessert ever!!

We travel a whole lot as a family. I love offering my kids the opportunity to see new places and enjoy fresh experiences. They happen to have a mom who can’t sit still for too long so we take to flight as often as possible. Through the years of travel I have learned ways to make long hours on the airplane and layover stops do-able and often enjoyable. With spring break and summer travels on the horizon I figured it was time to offer up some helpful travel tips to keep in your back pocket.

I  roam a whole lot on my own and I use these tips for myself as well. So no matter what your age you should find these tips helpful. When by myself I can wing it a bit more and keep things lighter. I can be more whimsical and self sufficient. By the way, did I mention I will be venturing to Switzerland in June? Yes indeed! Ridiculously excited about that journey to the Alps…

Citrus Roasted Strawberry Parfaits

Something very happy has happened around here. I have discovered the magical flavors of roasted strawberries. Have you ever done this? You need to drop everything to roast up a batch right now. Right after you read this post. Maybe in order to do this you must dash to the market to get a big batch of strawberries. That’s OK, i’ll be waiting for you when you get back. On your shopping list add a juicy orange, a jar of unrefined coconut oil and some thick Greek yogurt.

There are the berries before the heat. They are simply coated in two tablespoons of fresh squeezed orange juice and a tablespoon of my favorite coconut oil I use all the time.

The dazzling red color of these roasted berries says it all. Like stained glass I tell ya. Ahhhh, the beauty…

The coconut oil and citrus add even more flavor to an all ready perfect treat.

We have lots of fresh strawberries all year round here in California. This dessert/snack will be perfect for spring and summer picnics and parties too.

Strawberries get superbly sweet when heat is applied. They taste kind of like a liquid fruit roll up. Actually if you baked these for waaaayy longer you would end up with fruit leather/roll ups.

For now we will stick with parfaits. I suggest you try these strawberries with your oatmeal too. They make a nice spreadable jam as well. Smear some on your buttered toast.

For my vegan friends use a vegan soy or coconut yogurt. I would never want to leave you out of all this fun!

Creamy Roasted Carrot Coconut Shakes – Vegan

A funny thing happened yesterday. I mentioned to my husband that people are crazy for all kinds of smoothies and shakes. I also said that I didn’t share the passion. As a great husband who is always honest and forthcoming he responded back “Are you nuts? You have at least one shake per day, usually more like two.” Thanks my dear, I now stand corrected. The guy is right. It is usually my homemade Frappuccino or a version of that. I have been wanting to capture the flavors of carrot cake in a glass. Happily with this recipe I have.

Sure there is no cake in here, but the flavors of this homemade classic dessert are brought to life in a creamy, dreamy, health filled shake. Grab the freshest bunch of carrots you can find, and don’t forget to roast them first. That makes all the difference in the world. Roasting them with some coconut oil and spices brings out the most delicious flavor in this shake. A mixture of coconut milk and almond milk add to the perfect creamy blend.

Coffee and chocolate are usually the stars in my shakes. It is nice to have a twist. This shake tastes like melted coconut carrot ice cream. With little hits of cinnamon, nutmeg and ginger everything comes together nicely. It is also a great option for those on gluten free, vegan and grain free diets.

Freeze your coconut carrot shake and add it to your lunchbox. By the time lunch or snack time rolls around you have a healthy treat at the ready. Much better then diving into the office lunch room or vending machine.

I love texture with my shake, something to chew on. If you do too then top yours with chopped toasted nuts (I love walnuts), shredded coconut, raisins, flaxseed or graham cracker crumbles (find gluten free versions for intolerances.) I styled ours with some curly cue carrot slices to. Kinda weird, but fun. You might need a fork with these!

This shake has become a new favorite in our house and I will be blending them up all the time!

Toasted Walnut Spinach Pesto Pasta

We are just about to wrap up our two week trip at our home away from home in the mountains. At the start of out vacation we were welcomed by a huge order or fresh and fabulous food delivered by Black Canyon Foods. This was my first time ordering from these folks and this must happen every visit to Colorado. In our order was a Cilantro Pesto sauce that was gone in seconds. It was time to make my own version!

With just a few items left in the fridge and pantry I put myself up to the challenge of using up every last bit of what we have left. I refuse to waste food, sooooo with a heap of baby spinach, toasted walnuts, parmesan and olive oil our pesto sauce was put together in minutes.

Quinoa Sweet Potato Breakfast Bake

Are you ready to try a unique and fun new recipe? I sure hope so! I love breakfast casseroles for many reasons. The top two reasons are they are at the ready for grab & go breakfasts and they taste amazing! I have been doing a lot of baked oatmeal lately and I thought it would be fun to mix things up with quinoa. Quinoa is a favorite ingredient for lots of you these days, so I figured it was time to make a breakfast recipe with it! This is a sweet mixture of black quinoa, sweet potatoes, dried fruit, eggs, coconut milk and spices.
