I highly suggest you try doing it too if you have not all ready. Something extra special and happy takes place when you combine juicy red strawberries with crisp apples.

Cookies= Happy, yes? Recently I saw a movie simply titled Happy at the Mountain Film festival in Telluride. Can you say the word happy without smiling? Go ahead and try it. I bet a grin will grace your lips. This movie was very important. It focused on finding universal truths. Wonderful things that make us embrace life, giggle and grin. This sweet film took home many awards, not surprising really. My cookie post is the first in a series that will cover stuff that makes me happy. Happiness is catching – my goal is to spread joy and I hope you have fun joining me on this ride.

Welcome to the place I like to call home…the place that feeds my soul, whether or not I am in it’s actual presence. Even though I am not in Telluride full time, the energy and community in this high altitude mountain town brings me joy and great inner peace. Can you guys believe Memorial Day, the kick off to Summer is upon us? With a long three day weekend ahead people will head outdoors to BBQ’s, potluck parties and all kinds of get togethers. I hope you are planning on spending time with loved ones and friends. I am currently in Telluride, CO attending the Mountain Film Festival. Last month people from around the world tuned in at all hours of the day and night to catch a glimpse of Prince William and his bride Catherine Middleton walk down the aisle at Westminster Abbey. I took the events in via twitter feeds, not a shock. Later that day I attended a school fundraiser. Not just any small gymnasium party. A full blown, fancy hat wearing shin dig. It would have been sure to impress the press had they not all been at the Royal Wedding some 8000 miles away.

Mango Muffin recipe with Almond Flour

Mango is a sweet and tangy fruit that we love to eat on it’s own, in baked goodies and sweet-savory sauces. This tender, moist muffin I came up with is decadent, satisfying and fueled with high-energy ingredients. I finally got my hands on a jumbo five pound bag of blanched almond flour, a gluten free ingredient I learned about from my friend Elana of Elana’s Pantry. She said it was great, her readers agree and it was time for me to try it too.

Berries and Goat Cheese Mini Pizzas

I am so excited to share these fruity goat cheese pizzas with you. I took all the elements I love about a cheese platter and baked them into a pizza. Instead of having the cheese, berries, nuts and crackers on a plate individually, the addition of heat & dough adds lots of fun and flavor. You can use whole wheat dough or bake up a gluten free crust, the choice is yours.

Today I am gonna share with you the simplest recipe ever….a precursor to my larger post tomorrow. I figured a good homemade mayonnaise  is worthy of it’s own recipe page. This spread will be great for summer entertaining, egg salad, pasta salad, BLT’s, juicy burgers, sandwiches and anywhere else you might like a dab of creamy goodness. Mayonnaise is more of a method than actual recipe. You are simply emulsifying ingredients until a creamy spread is formed.
