Cranberry Sauce with Pear & Pomegranate

Please tell me you are willing to take a few minutes to make a fresh cranberry sauce. It is so worth it. Really. You can make it as sweet or tart as you want and all that is required is simmering some fruit and spices on the stove. I get it that some folks like the canned stuff. If that is part of your Thanksgiving tradition then go for it. If you want to try the real stuff, then I am here to encourage you to go for it. This sauce is bursting with fruity flavor & little pomegranate gems are sprinkled throughout.

Cranberry sauce is an excellent way to highlight seasonal fruits. The last recipe I posted was a Sweet Potato, Bacon & Pomegranate Salad-the colors & flavor would add zest to any holiday meal. From cranberries to pears, apples & citrus, the choice is yours.

My Pear Spice Cake was recently featured on PBS Parents on a post called the Virtual Thanksgiving Dessert Table. That is a sweet compilation of goodies to inspire your holiday sweet tooth.

From casseroles to chutneys to the turkey, the inspiration is out there for the taking. We all have no excuses but to get in our kitchens to cook up something. Even if it is as simple as this cranberry sauce you see right here.

Variations

  • Add a handful of dried fruit or raisins while your cranberry sauce is cooking.
  • Top with some chopped toasted nuts, pecans, almonds, hazelnuts & walnuts would be great choices.
  • Add some chopped candied ginger at the end and sprinkle some on the top of your sauce before serving.
  • If you don’t have pear, apple pieces would be great too.
  • While cooking add a splash of bourbon for a boozy flavor boost.

I recently made this recipe for a friends Halloween potluck party. At first I was gonna do my go-to Greek Salad & then I opted to go more seasonal with this Bacon Sweet Potato Spinach Salad recipe. I am so glad I did. This salad was well received and it was served alongside a delicious Guinness turkey chili.

Chocolate Pumpkin Cornbread Cake

 

Cornbread. With pumpkin & chocolate. I think I will need to rename this the pumpkin blog as I can’t get enough of the stuff these days. Cornbread as cake is a fun thing indeed. Cornmeal shows up a lot around here lately in all kinds of cakes, muffins and cookies, pancakes, etc. It has a strong presence in this cake and that is a very happy thing.

Today I bring you pear cake. OMG. I came up with this cake to pay tribute to all of the beautiful pears I have been seeing at the markets. Hope everyone had a super fun Halloween. We sure did. Today I am gonna bring you savory because we probably had enough sweet the past few days, weeks & month.

This chicken was awesome! My kids loved it and that made me very happy. I say make a big batch so you have plenty on hand for lunch, dinner, leftovers and lunch boxes. It is delish with a side salad, steamed or roasted veggies, brown rice or pasta.

Chocolate ganache is more a method than anything else. The name Ganache implys fancy, but in reality it is one of the most simple to prepare dessert sauces. It can be used as a topping for your favorite ice cream sundae or it can be used as a filling in between cake layers. No matter how you use it ganache is crazy yummy.

Homemade crisp for the winter and fall holidays.

Great news, you can have this crisp for breakfast, snacks, side dishes, brunch or dessert. You can even tuck a ramekin of this inside your lunchbox for a creamy, sweet, guilt free homemade treat to enjoy while on the go. In my world oats, butter and sweet potatoes need to be enjoyed year round. You can also substitute pumpkin in these crisps too. No matter what, satisfaction is guaranteed with this recipe. This Sweet Potato Crisp can be served at Thanksgiving, Christmas or anytime at all.
