Last year in June I launched a little blog called MarlaMeridith.com. I went to a conference in San Francisco in October because my friend Momfluential told me it would be a good thing to do. It was my first time away from my hubs and the kids. I was so green in the blogosphere. I had never heard of the White On Rice Couple, Tartelette, Steamy Kitchen, Matt Bites – none of them. Heck, I had not a clue who The Pioneer Woman was. I tell you I was so green & such a newbie I am not sure there is a name for it. Please share if you can think of one. I spent lots of time alone & I was OK with that. There was so much to take in.

My ears listened closely to each & every word at every panel I attended. I even announced in the middle of a HUGE photo panel that I had no time for taking food photos other than the ones I snapped with my iPhone………

Sizzle. It’s what you hear when bacon hits a hot pan. Sizzle. It’s what you hear when a cold slab of pure butter hits a hot pan. You get it? You think you know where I am heading with this post. There was some great love shared over my last post Hasselback Potatoes.

I figured I would use up that bag of Yukon Gold’s with some more potato passion. This time we have a fragrant, heavenly combo of maple-bacon-butter bliss. Slap a fried egg on the top and you have a warm, comforting, high energy breakfast.

I have to be honest with you guys-I don’t really like potatoes. I adore sweet potatoes, but they offer up a whole other kind of experience. Regular starchy potatoes have never really been my thing. Until now. I have found a way to not just like, but adore potatoes. It helps that these sound more elegant because they are Swedish baked potatoes (Hasselbackspotatis.) Don’t worry I won’t make you say that word, just enjoy your potatoes.

Cheerios and Chocolate Halloween Treats

I do not usually post two days in a row, but in this case it is worth working double time, triple time, over time to bring you treats. Halloween is sneaking up very quickly & even though the temperatures are soaring over here we are celebrating Fall in a big way.

The folks over at General Mills & Betty Crocker are hosting the Big G Halloween recipe party. The recipe needs to include a Big G cereal. Since I don’t do the sugary stuff the choice was obvious –  Cheerios would be my super star ingredient. I am a former graduate of the Cheerios University. What kid in the 70’s & 80’s didn’t live on Cheerios?

Enlightenment

Some say the Buddha enlightens, others swear by sunny days. I however get bits of enlightenment daily from all different sources. Back in 2006 I had the wonderful experience of planning my daughter’s 4th birthday party. I needed a cake. At that time I did not bake. I knew nothing about how to make flour, sugar, butter, eggs and chocolate turn into a magical crumbly confection. After a bunch of research I found myself standing in Blackmarket Bakery talking to the owner & baker Chef Rachel Marie. This gal knows baking, great ingredients and how to put flavors together in phenomenal ways. The rest is history.

We are so excited that Halloween is around the corner. Can you tell by our pancakes? One look into these Jack -o’-lantern faces will tell you that we had fun creating these. Lots of giggly fun. My kids helped mix (over-mix!) the batter and I worked the griddle. We watched a cool video by Jim’s Pancakes that helped us decide to get adventurous with our pancake batter. Silly Halloween pumpkin faces got voted in. Pumpkin Spice and Chocolate got a unanimous thumbs up for delicious holiday flavor.

Cauliflower Mushroom Leek Soup with Butter Fish

Healthy pureed vegetable recipe to feed the family.

What is it about a hot bowl of soup that is so comforting and delicious? The simplicity of tossing a bunch of healthy ingredients into a pot and watching it bubble and simmer away is thrilling. Here cauliflower, mushrooms and leeks are sautéed in a bit of olive oil then covered in broth. the whole mixture gets a whirl in the blender and a beautiful puréed soup is formed. Top with the Butter Fish (Black Cod) and you have a little something more.

Three Cheese Spaghetti Nests

Spaghetti and cheese. Yup. Not much more & not anything less. I cannot think of anyone that does not like a comforting bowl of hearty carbs with gooey melted cheese. With these nests I wanted to get a bit playful with presentation. Not only are they in the shape of well, nests-but I added color to the whole wheat pasta with the spice tumeric. I also added a slightly smoky flavor with my handy dandy smoked paprika. Yes, I did say whole wheat pasta & yes as always I share with you a recipe that has a healthier profile than the usual ones. Why, why not?? Dig in!

Cherry Earl Grey Applesauce

Who in the world would have thought that my favorite apple the Pink Lady had a super cool website? I am very impressed with their bright & cheery graphics, makes me love ’em more. Pink Lady apples are the perfect combo of sweet & tart. They don’t turn brown easily & they have a delightful crispy-crunch when you bite into them. Second up I like Granny Smith & Honeycrisp. No matter what your favorite apple you can make a great fresh homemade applesauce.
