Strawberry-Mozzarella Stuffed French Toast

Why have one favorite when you can have two? When I don’t know what to name a recipe I dream up all the possibilities and then explode with a title. In this case we have grilled cheese. Then it is dipped in an egg batter. It is then toasted in a hot pan until it is crispy on the edges and hot & gooey in the middle. Not only is it grilled cheese, but it straddles French Toast too. I guess you could say it is a stuffed french toast. The strawberries add sweet & fruity and the cheese adds creamy, rich, fill you up decadence.

When I originally got the invite to Baking With Betty it took a few seconds to ponder my RSVP. I said seconds, well maybe one second. What was my brief hesitation? the fact that I would need to leave my heavenly Telluride mountains and lovely family for 38.5 hours. I quickly weighed Minneapolis & Colorado in my mind and knew stepping away from high altitude hiking for baking would be OK. My answer was of course, YES. The folks at General Mills are pros at event planning & had me all booked and travel ready within minutes. I was signed up for the Betty Crocker test kitchen blogger baking workshop.

Homemade recipe for sweet enchiladas As most of you know we spend a good part of the Summer in Telluride CO. Each season is magical here. When we are here, we live here. I love to shop the farmer’s market, hang out with local buddies & enjoy time with my family. It is go, go, go & relax after the go! I love to cook while we are here, the mountains always inspire me. This week for Summer Fest the focus is Stone Fruit. My goal on Friday at the local farmer’s market was to find the perfect peaches for these Peach Cream Cheese Enchiladas. I was contacted recently to try out Tortilla Land corn and wheat uncooked tortillas. My goal: to combine my fresh peaches with warm corn tortillas & boy was it fun!

Anyone out there remember Dannon Frozen Yogurt Pops from back in the 80’s? Or was it the 70’s? I think I am starting to date myself. Anyway, I used to love those frozen treats. They were different from anything else in the ice cream aisle. They were creamy, sweet, tangy and dreamy. They were the kind of dessert & snack that you could easily convince your parents into thinking they were actually healthy. After all, they are made of fruit and yogurt right? The yogurt pop is kind of like a frozen smoothie on a stick.
