Even though July 4th will be celebrated differently this year, we can still revel in red, white, blue celebrations. Social distancing is the norm as are face coverings. What we can embrace is family, friendship and our beautiful country. It’s a time to reflect on happiness, JOY and you can still catch those fireworks live online or on TV.
Here in Telluride, CO we are known for our epic mid-day July 4th parade and evening fireworks. Crowds would typically be huge and our tiny mountain town of 2,500 expands from 18,000 to 24,000 people eager revelers. Obviously that won’t be the case this year as we must adhere to health codes. Looking after each other’s health is essential. I hope you all can enjoy everything we DO have. The freedoms, prosperity and abundance that we can find in life’s little things. Celebrations are what we make of them no matter how big or small. Let’s look at restrictions as opportunities to reinvent how we gather. Breathless has 5 sparkling wines to choose from: Blanc de Blancs, Brut, Blanc de Noirs, Brut Rosé and Sparkling Moscato. Elegant, crisp bubbly at a very fair price point. Their goal is “bringing bubbles to all!” Produced in the traditional méthode Champenoise which is a process involving secondary fermentation in the bottle. This is how Champagne is produced, but any bubbly made ouside the Champagne region of France cannot be labeled as such.

I’m a fan of Brut (dry) sparkling wines and Breathless has nailed this with their wine! The label is owned by three sisters and the winemaker is a female too. Sharon Cohn, Rebecca Faust, and Cynthia Faust are sisters who grew up in Northern California. The Breathless label was launched to honor their mother who passed away from a rare lung disease. The wines are such a beautiful tribute to her.
They are seeing great success with their wines and were just featured in Forbes! They offer a Sparkling Society membership club which is a GREAT way to have bubbly delivered directly to your door.

Can you believe that July 4th is just around the corner? We are going to be doing some social distancing picnicking and I’m brining this delicious Skillet Brown Sugar Blueberry Cobbler to the celebration. This is such and easy recipe to take to any event and you can have it from prep to table in just under an hour. I use my favorite 10 inch cast iron skillet for this recipe.
Always a welcome breakfast or on the go snack is a delicious muffin. If you are a berry lover like I am then you will love these Triple Berry Muffins. A combo of fresh raspberries, strawberries and blueberries make these a trifecta of tastiness. I added some whole wheat pastry flour to make them just a little more healthy. We’ve been celebrating the warm weather here in the mountains (except for the fact that it’s currently SNOWING!) It’s the time of year to celebrate fresh veggies and one of our all time favorites is English Cucumbers. They are crisp, cooling, seedless and so tasty! Whenever we go to Japanese restaurants I always order this Asian Cucumber Salad as an appetizer. It’s really so quick and simple to make at home. You can easily duplicate the flavors at home…so there’s not reason not to have it all the time!
I’m always on the quest for recipes my entire family will love. My daughter has been carefully following a vegetarian diet the past year, and I try to accommodate her choices in many of the meals I prepare. These completely delicious Vegetable Enchiladas hit the mark for all of us. They are filled with flavor and really satisfy both meat eaters and vegetarians.
