Rustic Roasted Beet & Sweet Potato Salad

Is everyone ready for the long weekend? Time off to enjoy family, friends and in my case lots of skiing & eating…This Rustic Roasted Beets & Sweet Potato Salad is simple to prepare and well worth spending just a little bit of time in the kitchen. Remember my Maple Citrus Roasted Pecans? They are in this salad too. They offer up crunchy sweet satisfaction.

Dress this salad however you wish. I like a citrus dressing, just a simple twist of fresh lemon and olive oil.

Roasting root veggies (any veggies really)  brings out so much flavor. A few times a week I take a few giant sheet pans, chop up vegetables and roast the heck out of them. Here are a few recipes you might like with roasted veggies:

Another wintery salad you should check out is my Bacon, Sweet Potato, Pomegrante Spinach Salad.

I eat this popcorn as I type this post. Fistfuls.

Just recently popcorn has become a really BIG hit with me. Past few years I kinda gave up on it. No gnarly breakup or anything, I simply had no craving for it. Well that has changed my friends.

Might have something to do with the fact that now I pop it stove top in oil. The paper bag microwave version is great for fat-free flair, but popping in oil adds so much flavor. Oh boy!

This sweet & crunchy treat is perfect for your sweet Valentine…or for any time at all.

If there is somethin’ I love about my hometown of Telluride is the great BIG welcome you get when you arrive. Yesterday I went out to photograph this old building which sits waiting at the edge of the Valley Floor.

Every day I pass by it. We give each other a nod hello. I will photograph it many times. In all different lighting conditions. It fascinates me.

I am a light chaser ~ this old barn reminds me that each day is filled with prayer, gratitude, lightness and JOY. It stands strong and reminds me to do the same.

Bacon, Pear & Blueberry Salad

If there is one thing I love about living in ski country it’s the fact I can eat more. Way more.

I am always outdoors & active all day. I crave slightly heavier foods to keep me going on the slopes. Even just walking here you get a workout (living at close to 10,000 feet gets the heart a thumpin’!)

This sweet/savory salad fuels me up and gets me from bump runs to kiddo school pick up with great energy…
