Project Lunch Box – 30 Day Challenge  | MarlaMeridith.com

Can we do a little project together for the next 30 days? I pitch that we all partner up to pack healthy meals for ourselves (if you eat lunch away from home) and our kids. Are you in? I sure hope so. If you can’t swing five days a week for 4 weeks than can you go with at least a day or two a week? I bet once you get started you will see how easy it is to pack a quick, healthy and delicious lunch box.

We are starting this event on a weekend so you have some time to go grocery shopping. I have a shopping list if you need a few suggestions to point you in the right direction.

I will post regular updates, ingredient choices, product and meal ideas on Facebook. That will be the destination to share ideas during this challenge. Two of my most *happy* things in that photo. My sweet little guy and giant orange pumpkins! That bright squash is the gateway food into everything that symbolizes my two favorite seasons, fall and winter. Gosh, I can’t believe this photo was taken back in fall 2009. The time is moving quickly…..

It is ridiculous how much I LOVE pumpkin. From here until the weather gets hot again you will see it featured here every way I possibly can. Are you OK with that? I really hope so. There she is Lady Liberty. Perched on a muffin with a coconut dress. Standing tall to honor peace and freedom. Today we all reflect on a day where our world was vandalized. Today we come together to remember, heal, hug and love.

It has been a decade since the horrific 9-11 terrorist attacks. Earlier this week I asked us to bake Remembrance Cakes. Cakes to share love, thoughts and prayers for lives lost. You guys have given true emotions and support for the folks who need it most. You are all amazing!

What were you doing when you heard about the tragedy 10 years ago? What are you doing today to honor and support? We will eat cake and share lots and lots of hugs…..

Cowgirl Elk Chili with Roasted Sweet Potatoes

In my dreams, I am a cowgirl. I ride the mountain range, heat food over an open flame and breath in the fresh air….

If you are not a meat eater then you might want to tune me out for a minute. You could also sub out the elk with any ground meat or poultry of your choice. If you are vegan then you could go with tofu crumbles, beans or a meatless substitute. You would still benefit greatly with all the other ingredients in this chili. I mean really, sweet potatoes and spices all done up cowgirl or cowboy style. Bring it.

Remembrance Cakes for 9-11

Healthy cakes and muffins by Marla Meridith

They were sitting at desks, talking on the phone, in board meetings, dashing out to grab a quick cup of Starbucks coffee. They were surfing the internet, chatting around the water cooler, giggling with friends. Living life.

I cannot believe a decade has gone by since the world changed forever. 2,983 people gone. They lost their lives in multiple terrorist attacks on US soil on 9-11-2001. We also lost brave folks that gave their lives trying to save others. They are all heroes. So much damage, sadness and wreckage. Faith can be restored (I hope) but the loss for many will be forever.

These folks were innocently living their lives…..people like us. We came together for them then. We have not forgotten. As bloggers with voices. We bake, we love, we share.

This Sunday morning marks a decade since the 9/11 attacks. Together we can remember and share loving prayers with the moms, dads, children, sisters, brothers, husbands, wives, friends, colleagues. Everyone who lost.

Sunflower Seed Butter Oatmeal Sandwich Cookies – Gluten Free & Vegan

Another round of the Secret Recipe Club is here! I love this group and I always look forward to the great reveal. This month I was given the lovely blog The Boys Made Me Do It. There are some great recipes over there. The first recipe that caught my eye were these awesome Peanut Butter Oatmeal Sandwich Cookies.

 

Of course, I had to play up my healthy twist……

Just like Cara (the creator of The Boys Made Me Do It), I am a HUGE fan of peanut butter. I use it as often as possible.

So why did I swap out my favorite PB for sunflower seed butter?

 

A few reasons. I always like to put a unique twist on other peoples recipes. Also, with the new school year, we need lots of home cooked food for our lunch boxes. Many schools these days are Nut Free Zones, so I took out the peanut butter and gave you an option you can safely send to school. Make them with all fruit jam and you have an equivalent of a PB & J cookie sandwich.

Not only are these nut free, but they are also low fat, sugar-free and gluten-free too. A total win if you ask me. Without the cream cheese filling, they are vegan. Your cookie, your choice. Very adaptable.

As always, I munch on these for breakfast, snacks and dessert. Why take the extra effort trying to decide when you can eat cookies?

Do you guys like sunflower seeds & butter? I love all nut and seed butters. Not picky at all.

The flavor is wonderful, with the fat from coconut milk and sunflower butter the texture of these cookies melts in your mouth. Be sure not to use baking soda with this sunflower spread. If you do you might be surprised with a bright green color. That happened to my first batch. It was shocking! Cool for St. Patty’s day though.

 

You can reduce the green by limiting baking soda or adding lemon juice to your batter. Interesting huh!

These cookies were a welcome home from a busy, active day at camp. A cool glass of milk and some extra jam on the side makes a long day of play well worth every jump, run and leap.

Fresh Catch in New Orleans: A Seafood Trip

Back in June I had the most incredible experience in New Orleans. I was invited out to the Gulf Coast as part of the Food Blog Masters to discover the delicious fresh catch flavors of Louisiana Seafood . Good thing I LOVE creatures of the sea, because on this trip we indulged in everything from fresh caught crab, shrimp, oysters, crawdads, red fish…you name it. If it swims in the waters of the Gulf Coast we ate it.

Nutty Apple Tarts – Gluten Free & Vegan

There has been a wispy bit of cool air blowing around here in the San Juan mountains. With the crispness in the air I get really excited for fall and of course my favorite season winter. Flavors that swoon include apples, cinnamon and pumpkin pie spice. I created this Nutty Apple Tart with cool days in mind, but it is equally as good in the heat of the summer.

What is not to love about a tart loaded with apples, fruit jam and nuts? Have you ever tried St. Dalfour Fruit Conserves? They come in every flavor you could possible imagine and they are 100% fruit, have no added sugar and no preservatives. Trader Joe’s had great 100% fruit jams too. Love that.

You know what I also love? Bob’s Red Mill…..they have every high quality flour, grain, pancake mix, etc. you could possible imagine. They are easy to find too. If you can’t find these products locally, then you can easily order online. Or win my giveaway…..

I made sure this tart was gluten free to0 so everyone can enjoy it. It is also vegan, even cooler huh?!

This tart has the texture of a Linzer tart cookie and layers and layers of flavor. Linzer tarts use nuts and flour as a base for the cookie, so it makes sense that my creation would have a similar flair. We are nuts about nuts over here. I used a combo of pistachios & pine nuts as a topping.

Using quinoa, oat and almond flour gives a great dimension of texture and flavor. I first learned about blanched almond flour earlier this year from Elana of Elana’s Pantry. She knows a thing or two about great food. Almond flour is addictive in baked goods. It is buttery, rich and bakes up perfectly. The good thing is it is also good for you.

Think of this recipe like a sweet pizza, layer it with the fruits, nuts and jams of your choice. Whatever you have available should be perfect. You can play around with the flours too. Let me know what you come up with and how it works out. I love learning new things. When you guys experiment with my recipes I always learn so much!

Have you ever noticed that tarts can be made in so many different ways? Some have creamy tops, some fruity, some have crust on the top and bottom, some are pop tarts. Any which way they are great. Just know that I enjoy this tart often for breakfast, lunch, brunch and snacks. A little piece satisfies in a big way.
