There is an amazing feeling that happens when someone I know & love has great success. As children success might be learning to walk, kick a ball & run like the wind. As adults, the idea of achievements gets a bit more complex. We strive for more in our personal & professional lives. We need to, we are adults after all. Banana Almond Snack Cake

On the heels of Food Blogger Camp I wanted to bring you a cake that epitomizes what this blog is all about. Healthy, whole food ingredients that taste great, make you feel energized & well fed. This is a banana nut bread recipe that pairs perfectly with a steamy morning cup of coffee or as pick-me-up afternoon snack. I chose to call it a “snack cake” because lets’s face it banana bread is really cake, right? It has all of the flavor of a higher calorie banana bread but none of the refined sugar and just enough healthy fat to satisfy.

Food Blogger Camp Riviera Maya

A big part of my personality is to dive in with both feet, seize opportunities, grab ’em & run. This past week I attended Food Blogger Camp at the Grand Velas Riviera Maya resort near Cancun, Mexico. Camp was very busy as it was filled with instruction, inspiration, playtime & extravagance. Not only was I taught valuable information from some of the most successful bloggers, but I connected with people & myself. Life is all about relations with others & having a strong personal core. Thankfully my job is built around food & food brings people together. It strengthens, unites & nourishes the body, mind and soul.

Sweet Potatoes with Blue Cheese & Bacon

 

If you like potato skins (and I have not found too many folks who do not) then chances are you will love this Sweet Potatoes with Blue Cheese & Bacon recipe. With healthy New Years resolutions, not much can beat the sweet potato in both nutrients & flavor. The small amount of fat from the cheese & bacon add tons of flavor. Fat from natural sources satisfies & keeps us from binging on the wrong stuff later in the day. Portion control is the main thing we need to shoot for to reach healthy weight goals. Not deprivation. That leads to disaster.
