One-Pot Tomato & Spinach Pasta

With the school year in full swing we all need easy, convenient & super delicious meals. I’ve got plenty of them & this one your whole family will love! One-Pot meals fascinate me in so many ways. They require hardly any clean up & the flavors are mouthwatering with hardly any effort at all. This One-Pot Tomato & Spinach Pasta is sure to bring smiles to everyones faces & is a the perfect family dinner…

Another bonus to this recipe is that it is a great addition to the lunchbox. If you have some pasta leftover, save it for the lunchbox! Apple Hand Pies aka: Apple Turnovers

Looking for a pastry thats super simple, totally homemade and out of this world delicious?! Bring on the apple hand pies!When debating what to call these I’ll leave it up to you. But, here’s two names you can use interchangeably for now: Apple Hand Pies aka: Apple Turnovers They could probably go the route of empanadas too! I’ve been chomping at the bit to share these delectable apple treats with you ever since I baked them for my family. They were gone seconds after they came out of the oven. If you have a moment, do let me know which name you think best describes them.

I’m so excited that I have a super reliable pastry dough recipe to use now. Ever since my foray into pies I will forever make my own pastry dough. Please bake my Peach Pie before the summer runs out. Trust me you will be very happy if you make that & these hand pies.

When I have all the ingredients out & the kitchen is all covered in flour anyway, I typically make a few batches of this pie dough at one go. You can refrigerate it up to a week before you use it, or you can store it in the freezer for a few months. My suggestion is that you have some dough at the ready when you need it. Instead of a canning day…have a dough making day!

Your house will smell ahhhhhmazing when these bake. Take a good look at that flakey crust & delicious apple filling. I think you will agree that it’s time to bake! Enjoy your hand pies!

Maple Pumpkin Ice Cream

With Labor Day weekend just past us, it’s time to dive into all those fall flavors we know & love so much! I’m so into this time of year! We switch gears from summer & launch into fall. You know what that means? Lots & lots of pumpkin, cinnamon spice & a slew of my favorite comfort foods. This Pumpkin Ice Cream will put you right in that autumn spirit.

Isn’t it great that you can enjoy ice cream all year long? It’s gotta be one of my all time favorite desserts no matter what the weather. All you need here is a delicious homemade vanilla ice cream base then you add maple syrup, pumpkin & spices to the mix.

I’m totally in love with Williams-Sonoma Pumpkin Ice Cream recipe, so this is adapted from there. It’s creamy, rich & filled with maple, pumpkin spice flavors.

One-Pot Pasta with Beef & Broccoli

This dish is perfect for back to school family dinners & there is plenty leftover for the lunchbox too! Fall can be totally crazy when we all scramble to find new routines. The lazy days of summer are over and we need to make adjustments with new schedules & commitments. I’m making things easier for you with this One-Pot Pasta with Beef & Broccoli. A delish weeknight meal that is simple to prepare & you will not have a sink full of dirty pots & pans when you are done cooking. In less than 30 minutes you can have dinner on the table. Anything to save time is a great thing!

My kids are back to school & that means I have a few more minutes in the day to prepare delicious, healthy meals. You can use mostly pantry items in this recipe, which makes it easy to shop ahead. One of the most important things in my world is to make sure I feed my family a balanced diet filled with delicious & varied ingredients. This pasta covers all bases. It’s energy packed and filled with protein & veggies.

As we plunge into a new school year (where did the summer go?!) one of my main priorities is to bring all of us healthy meal ideas that are just as great for dinner as they are in the lunch box. There’s nothing better than leftovers that can easily be transformed into a lunch for the kids. One that they will love! There’s nothing worse than when they come home with an untouched lunch. Not the case with this pasta!

I never realized that pasta can cook just as perfectly in a measured liquid as it can in a huge pot of boiling water. The flavors here are huge, as the pasta cooks itself in a broth hit up with some cream. Try it tonight & let me know what you think!
