I’m super excited to share my lifestyle blogger friend Erin Busbee with you today! We met here in Telluride, CO a few months ago and hit it off immediately. Erin is a beautiful mother of two who juggles her busy life with style and grace here in the mountains. I wanted you all to get get to know Erin better so I asked her a few questions:
MM: How are you enjoying the full-timers life in Telluride, CO? Is the lifestyle here what you expected?
EB: I knew that I loved Telluride after spending so many summers and vacations here, but I wasn’t sure I was going to love it year round. It’s actually better than I expected, and those expectations were already pretty high. I am LOVING life here!
MM: Your website empowers women of all ages. You have a focus on styling for ladies over 40 ~ what are a few haute tips that you recommend for this age group?
EB: I think it’s important to understand your body, and what fits and flatters you. I also think that as we get older we can still rock just about anything with certain modifications.
I started a series, called “Style Reboot” to help reboot your style. Many of us get lost in the style department because we’ve spent decades caring for everyone else. I think my series will help get you back on track!
MM: As a mom juggling two young kids and a busy job, that means you likely have to cook. Do you like to spend time in the kitchen? What is your go-to meal that you know the kiddos will love?
EB: When I am passionate about something, watch out. I will read, study, work, practice until I’ve mastered it. But, sadly…cooking has never been a passion. If I ever made a ridiculous amount of money, a personal chef or meal delivery service would be tops on my list! 😉
My go-to family meal is baked or grilled chicken, steamed broccoli and sweet potatoes.
MM: What trends are you super excited about for Spring/Summer fashion?
EB: I just bought a gorgeous lavender dress. I’m excited to see this color coming back. I also love all the white pieces…white dresses, white shoes, white boots, white bags. White feels so fresh and modern. Not to mention it’s the perfect blank canvas for all of your favorite accessories!
MM: Who are some of your favorite style icons?
EB: I really love to see what Olivia Palermo puts together. I think she artfully mixes elegant and modern pieces. Rachel Zoe has accomplished amazing feats and has paved the way for stylists. And, of course I want to mention fashion bloggers. Bloggers like Rachell Parcell, Chriselle Lim and Something Navy, all have their own clothing lines, a very impressive and inspirational milestone.
MM: Ocean or Mountains….whats’s your favorite look to style?
EB: Probably the ocean since it feels a bit more romantic and conceptual. Mountain style is very casual and comparable to many other places that aren’t necessarily in the mountains.
EB: That’s an easy one, I do not drink…so none of the above. How about green tea or Diet Coke?

I absolutely love chopped salads. The whole idea of enjoying all the ingredients in one bite is blissful. There is no picking or choosing because everything is chopped into the right size for your complete enjoyment. In my Chopped Salad with Warm Bacon Shallot Vinaigrette recipe, the plentiful bacon, avocado and Gorgonzola cheese can easily satisfy as an entree meal. If you crave more protein, then simply add some chopped chicken, steak, salmon….or anything you wish.
Also try my Chopped Greek Salad recipe, a HUGE hit on Pinterest too! These salads are great for summer entertaining and they come together very quickly.
The Easter bunny will be visiting in just a few weeks and I heard that he adores jelly beans and sugar cookies. Maybe he will visit all of us first if we swoon him with these Jelly Bean Sugar Cookies. These are really fun to bake with the kids, so if you have some extra time together over spring break…then bake! I used powdered sugar instead of granulated in this recipe which gives them a really nice, delicate texture. I suggest a double batch so you have a few left for that hungry bunny rabbit.
I absolutely love Indian food…unfortunately we don’t have an Indian restaurant here in Telluride, CO so I need to make it on my own when I crave it. I meant to post this delish recipe for #MeatlessMonday but the day got away from me…excuse me for that. But now you have it here any time you need it! I’m certain you guys will love this recipe. My 14 year old daughter can’t get enough of it. This meal is filling, but not heavy. The flavors are robust and addictive. Skinny Chickpeas with Tikka Masala Sauce is the new go-to for healthier Indian cooking.
We love these Peanut Butter Muffins as a quick grab and go breakfast, brunch and mid-afternoon pick-me-up snack too. They are perfectly sweetened (but not too sweet) with golden brown sugar and peanut butter chips. The ultimate perfectly portioned treat for all you peanut butter lovers. Bake some up as soon as you can. In just under 30 minutes you can have a delicious warm muffin with your coffee. Love PB so much and want some more great recipe ideas? I love the color trend forecasting for spring and summer fashions 2018. It’s always nice to have a focus to shop for. Over the next few weeks i’ll be curating some beautiful styles and colors for you to shop for before the season really kicks in. Pantone is the go-to color system that manufacturers try to match. This Almost Mauve color is soft, very pretty and feminine. It’s not too pink, but just pink enough. It’s very suitable color for most skin tones. What do you have planned for St. Patrick’s day? I bet the fun will include something green to eat or drink. I have the most Delicious Treat Recipes for St. Patrick’s Day for you to imbibe in. They will each bring you the luck of the Irish with every sweet taste! My plans for the holiday include playing in a Snowflake Golf tournament here in Telluride. What that means is 60 of us will dress in silly green costumes and play a 9 hole round of golf, in the snow. As you can imagine, partying will coincide heavily with this silly contest. I have been on the hunt for the coolest items for spring and I fell head over heels for these Balenciaga ankle boots. I’ve seen them in blue and silver and they both ROCK! So many people are freaking on them at the events I go to, so I thought I had to share all the fun with you too!
I love them with blue denim, black denim & everything white too. I’m so excited to wear them with skirts and dresses in the summer.
