Coconut Macaroons

I love Coconut Macaroons this time of the year. They are completely delicious, simple to prepare and great for cookie exchanges and holiday gifts. This is a basic recipe and begged to be eaten as is or dipped in your favorite chocolate. You can even chocolate dip them & then dip again into crushed candy canes, sprinkles, chopped dried fruits or crystallized ginger. The sky’s the limit!

These are perfect dunkers for coffee and hot cocoa too. Another great thing about these macs are they are grain free and gluten free for those that are looking for that kind of treat!

Butternut Squash Couscous Salad with Orange Vinaigrette

We just spent a few days in Devon, England and one of the absolute highlights was my aunt Suzanne’s farm to table cooking. Naturally, when she served this Butternut Squash Couscous Salad I quizzed her emphatically about the ingredient list. These are photos of her creation. I’ve embellished the salad with a light orange vinaigrette to dress it up just a bit more.

How to Pack for an EPIC Family Ski Trip

Family ski trips can be a memorable bonding experience. Everyone gets to play outside in the snow, make new friends, eat great food and create everlasting memories. To make sure that the memories are fun ones and not ones you want to forget, you need to pack the right gear. There’s nothing like trying to push out the door to make it to ski school on time to find out you (or your kids) forgot ski gloves, long underwear or a ski pass.

If you can bring most off these items in your suitcase, then it’s smooth swooshing all the way to the slopes. If you can’t get these items at home or there’s no time for online, no sweat. Ski resorts usually have great shopping for all the items you’ll need.
